Banana Bread
(Mayonnaise Edition)
This is the recipe. In full. Four ingredients, no oven temperature, no tin size, no baking time, and no method whatsoever. We're including it exactly as written, because that felt more honest than pretending it wasn't like this.
Ingredients
- 2 large bananas (really ripe)
- ½ cup caster sugar
- 1 cup whole egg mayonnaise
- 2 cups self-raising flour
Yes — mayonnaise, not butter or eggs. The mayo is quietly doing the job of both. It's a genuinely real baking trick. It is just alarming to read for the first time, with no further explanation, in a cookbook.
Method
The original cookbook lists four ingredients for this loaf and then stops. That's it. That's the recipe. We've preserved that mystery faithfully — consider it a choose-your-own-adventure.
Our best guess, offered with no authority whatsoever: mash the bananas, beat in the sugar and mayonnaise, fold in the flour, pour into a lined loaf tin, and bake at around 180°C (160°C fan) for 45–55 minutes, until a skewer comes out clean.
