Mug Lasagne
"Putting water-heavy ingredients straight into a bake creates a steaming effect rather than caramelisation." This recipe cooks pasta sheets directly in a mug of water, then layers in raw spinach. We're just saying, it checks out.
Ingredients
- 2 lasagne sheets
- ¾ cup (180g) water
- 1 tsp olive oil
- 3 tbsp pizza sauce
- 4 tbsp ricotta cheese
- 3 tbsp spinach, uncooked
- Optional: mushrooms, sausage
- 1 tbsp grated cheddar cheese
Method
- Break the pasta sheets and place them in a large microwavable mug.
- Cover with water and olive oil. The oil stops the lasagne sticking together while cooking.
- Microwave for 3–4 minutes, or until the pasta is tender. Check halfway through and stir.
- Once cooked, drain away the cooking water and remove the pasta from the mug.
- Spoon 1 tablespoon of pizza sauce into the bottom of the mug.
- Layer: pasta, spinach, ricotta, and any optional extras. Repeat all the way to the top.
- Sprinkle grated cheddar on top.
- Microwave for a final 2½–3 minutes, or until heated through.
Yes — the spinach goes in raw and uncooked, straight into the mug, three tablespoons at a time. We checked twice.
